Serves: 4 people


Chicken Breasts (skinless, boneless) – 4
Egg – 1
Paprika – 2 tablespoon
Salt – as required
Pepper – as required
Bread Crumbs – 1 cup
Flour – ¼ cup
Oil – required for frying


Make ½ thin sliced pieces of chicken and sprinkle salt and pepper over it. Take a bowl and beat an egg and keep it aside. In another small bowl, mix 2 tablespoons of paprika with the powdered bread crumbs. Spread flour on a medium sized plate and keep it ready for the chicken.

In a deep frying pan pour some oil and heat it up to 375° F.Take the chicken pieces and roll it in flour. Shake off the excess flour and roll it in the beaten egg mixture. Coat this chicken well in the bread and paprika mixture. Place the well coated chicken pieces in the hot oil and fry for about 5 minutes until it turns tender. After one side of thechicken is done, turn it and wait for the other side to cook.

Chicken should be browned evenly on both sides so that it is perfectly cooked. When done, remove from heat and place it on a plate with a tissue to remove excess oil. It is best when served hot aside eggplant caviar and lemon wedges.

Serves: 4


Vegetables (Carrot, green beans, cauliflower, peas) -4 cup
Onion – 1
Chicken Breast (skinless, boneless) – 4
Cooking OIl – 1 tablespoon
Curry powder – 2 tablespoon
Coconut Milk/ Creme Fraiche – 1 cup
Salt and Pepper – as required
Butter – 1 tablespoon


Wash and cut the vegetables required for the curry and boil them in water in a large pot with salt until it is boiled for about five minutes. After it is cooked, take the vegetables off heat and wash it in cold water. Slice the onions in medium size.

Slice pieces of chicken according to your choice and keep it aside. Take a skillet and heat oil and butter in it. After the butter has melted, add the chicken pieces to cook. Saute them withsome salt and pepper and keep it on medium heat for about 5 minutes.

You may stir the chicken pieces to make sure that all the sides are evenly cooked. Add the curry powder according to how spicy you want your curry and mix it well with the chicken pieces. To this chicken mixture add all the cooked vegetables followed by the coconut milk or the creme fraiche slowly.

Stir all the ingredients of the skillet properly so as to season the curry and add more pepper or salt depending on the taste.Take it off from heat after 2-3 minutes. Serve it hot with steamed rice.

For Making Herb Butter

Butter (softened) – 8 tablespoons
Parsley (finely chopped) – 2 tablespoons
Garlic (finely minced) – 2 cloves
Tarragon (finely chopped) – 2 tablespoons
Pepper – ¼ teaspoon
Lemon juice – ½
Chives (finely chopped) – 2 tablespoon

For Marinating Chicken

Chicken Breast (skinless, boneless) – 4
Egg (beaten) – 1
Bread Crumbs (powdered) – 1 cup
Canola Oil – required for frying
All Purpose Flour – ? cup


First, begin by making herb butter. Blend all the ingredients properly mentioned above in a small mixing bowl and cover the entire mixture in a plastic wrap. Fold the wrap tight and mold it such that it forms a log of the mixture. Refrigerate this wrap until it becomes hard.

Mash the chicken breasts keeping them covered on a plastic cover. Use a meat hammer and flatten the breast pieces. Cut and separate eight chicken pieces on a plate. Keep ready the three bowls: one containing flour, another with beaten egg and with the finely powdered bread crumbs.

Take the refrigerated butter from the refrigerator and cut them into eight equal sized slices. Make sure that the length of each slice is less than that of the chicken breast. Keep one slice of butter in each chicken piece and roll the chicken tightly without leaving any gap.

Ensure to tuck in the edges when you roll the chicken with butter. Place the rolls one after one first in flour, then egg followed by bread crumbs. Keep the well coated chicken rolls on a plate and refrigerate it for half an hour before frying it. Take a deep frying pan and pour oil in it and heat it to 375°F.

Place the chicken rolls and fry them for 15 minutes until the sides are slightly brown and the chicken is perfectly cooked. Take an absorbent paper and place these fried rolls to absorb the excess oil. Serve hot with sauce of your choice.
