Chicken Marsala

Chicken Marsala

Ingredients Required

4 boneless chicken breasts
1 cup fresh mushrooms, sliced
1/2 teaspoon dried oregano
1/4 cup all purpose flour
1/2 teaspoon salt
1/2 cup marsala wine
1/4 teaspoon freshly ground black pepper
1/4 cup extra virgin olive oil
1/4 cup butter
1/4 cup cream sherry

Method And Preparation

Flatten the chicken breasts by pounding them and keep aside.In a pan, mix in together the salt pepper, oregano and the flour. Simultaneously melt the butter and bring it to a boil.

Coat the chicken in the flour mix and brown in the pan along with the melted butter, add in the mushrooms and cook for a couple of minutes before adding in the cream sherry and marsala. Cover and simmer for about 8 to 10 minutes.Serve hot along with pasta of choice.

Piccata is a technique of preparing food which was originally used for cooking veal, however, a chicken version of this dish has over the years become a globally renowned dish.

Ingredients Required

4 boneless chicken breasts
1 small onion, minced
1/2 cup flour
1/4 cup oil
1 cup chicken broth
2 tablespoons drained small capers
1large lemon, halved
Juice of one lemon
3 tablespoons butter, preferably unsalted
2 tablespoons fresh parsley

Method And Preparation

Preheat the oven to about 200°F and place a heatproof plate on the middle rack.Slice the chicken breasts into half and sprinkle with the seasoning of salt and pepper. Coat the chicken with the flour.

Heat oil in a pan and brown the chicken breasts, keep aside once done. Add the onions to the pan and saute until transparent, add in the lemon slices and chicken broth, and simmer for about 5 minutes.

Add the lemon juice and capers and simmer for another couple of minutes. Lower the heat and add in the butter to thicken the consistency of the broth.

Remove from heat and spoon sauce over the chicken, garnish with fresh parsley and serve.

Ingredients Required

For The Sauce

extra virgin olive oil about 2 tablespoons
1 onion, finely chopped
4 cloves of garlic, minced
200 grams mushrooms, sliced
3 tablespoons of butter (preferably unsalted)
juice of a lemon
half a cup of chicken broth
freshly ground white pepper
salt, as per taste
4 to 5 basil leaves, coarsely chopped

For The Chicken

500 grams boneless chicken breasts
Olive oil
100 grams Fontina cheese
salt as per taste
1/2 teaspoon dried oregano
black pepper
4 slices Parma Ham

Method And Preparation

To Prepare The Sauce

Heat the oil in a non-stick and saute the onions and minced garlic, add the mushroom saute until browned. Add the lemon juice and butter and stir.Consequently, mix in the seasoning and chicken broth and simmer for 10 minutes.Add the basil leaves prior to serving.

To Prepare The Chicken

In a large mixing bowl combine the seasoning of salt, pepper and oregano and coat the chicken. Grill the chicken over medium heat.Once cooked arrange the chicken  on a baking tray place a slice of the ham over each chicken breast and, subsequently, top with fontina cheese. Roast until the cheese melts.To serve, pour the lemon mushroom sauce over the chicken and serve hot.
