If you are bogged down after a hard day’s work, it is best to indulge in some comfort food that provides warmth, nutrition and helps one de-stress. Sausages are one such ingredient which can be diversely used to whip up a host of dishes that make for a wholesome and nourishing meal. Here are some heart warming and comforting recipes with sausages.

Spanish Sausage Stew with Herb oil

Also known as fabada this is a traditional dish from the North West of Spain. Made with simple ingredients this dish depicts the rich flavors and culinary richness of Spain.

Spanish Sausage recipes

Ingredients Required

500 grams white beans, soaked overnight in water and drained
1 morcilla sausage, (Spanish Sausage) cut
200 grams pancetta, cut
2 chorizo picante, cut into large dice
1 liter of chicken stock
2 tablespoons olive oil
2 cloves of, crushed
1 large onion, chopped
1 tablespoon paprika powder
1 bay leaf
Generous pinch of saffron

Ingredients for the herb oil

2 tbsp chopped parsley
½ tbsp rosemary leaves, chopped
2 tbsp olive oil
1 clove of garlic, crushed
Juice of ¼ lemon
freshly ground black pepper
Salt as per taste

Method and Preparation

1. In a large pan mix together the beans, chorizo, morcilla sausage and chicken stock and bring to a boil. Reduce the heat and simmer for about 2 hours, constantly checking the level of the stock and adding in more if necessary.

2. Heat oil in a non stick, add in the pancetta, sauté for about 5 minutes, and add to the stock mixture. In the same pan saute the onions, paprika, bay leaf and garlic, saute for a couple of minutes and add to the stock. Let the stock simmer for a further 30 minutes before turning off the heat.

3. In the meantime, to make the herb oil combine the rest of the ingredients in a mixing along with the seasoning. To serve, pour the herb oil over the stew and serve hot, along with croutons. This dish takes about 5 hours to cook and serves up to 4 persons.

Toad In The Hole

This is another traditional dish from the English county of Yorkshire, and tastes best when accompanied with mash potatoes and steamed vegetables.

Recipes for sausage

Ingredients Required

8 sausages
1 large onion, finely sliced
2 tablespoons of olive oil
Salt as per taste
Freshly ground black pepper

Ingredients for the batter

100 grams plain flour
2 eggs
300 ml of full fat milk
Pinch of salt (preferably sea salt)

Method and Preparation

1. Preheat the oven to about 220°C. In a medium baking tray place the sausages, onions sprinkle with the seasoning and olive oil and bake for 15 minutes.

2.  In a large mixing bowl sift the flour add a pinch of salt and crack in the eggs one at a time. Mix lightly gradually adding the milk until the mixture is smooth and free from any kind of granules.

3. Pour this mixture into the sausage tray and bake for another 30 minutes, until the batter rises to a golden brown. Serve hot, along with steamed vegetables or a bed of freshly mashed potatoes. This dish takes about 45 minutes to cook and serves up to 4 to 5 persons.
