This dish may be conceived to be a popular restaurant dish, but it can easily be made at home with ease and simple ingredients.

Ingredients Required

For The Sauce
1 onion, made into a paste
1 can of crushed tomatoes
1/4 cup olive oil
1 teaspoon dried oregano
2 cloves of garlic, minced
Red paprika as per taste
Pinch of sugar

For The Chicken
4 chicken breasts, skinless and boneless
2 eggs
Salt as per taste
1 cup breadcrumbs
1 cup Parmesan cheese, grated
1/4 cup olive oil
2 tablespoons fresh basil leaves, thinly sliced
200 grams of mozzarella cheese, sliced

Method And Preparation

For The Sauce

Heat the oil in a pan and sauté the onions adding in the garlic paste, cook for a few minutes and combine the can tomatoes, paprika, oregano and sugar, simmer and cook uncovered for about 10 to 12 minutes.

For The Chicken

Preheat oven to 400°F.

Flatten the chicken breasts by lightly pounding them with a mallet or a pounder.

In a large bowl mix together the breadcrumbs, grated Parmesan cheese, and eggs, whisk together until the mixture is blended well together.

Heat the olive oil in a non-stick pan, coat the chicken breasts with the cheese and egg mixture and then the breadcrumbs and gently fry in the pan (approximately 3 to 4 minutes on each side).

Spread the tomato sauce at the bottom of a baking dish and arrange the fried chicken breasts on the bed of sauce, pour the remaining sauce over the chicken and top with mozzarella cheese. Bake in the oven for about 10 minutes until the cheese begins to brown.

This dish serves about 4 persons and can be served as it is or accompanied with spaghetti.

4 chicken breasts, boneless and skinless
Freshly ground pepper as per taste
½ teaspoon garlic powder
1 teaspoon dried parsley
Red paprika as per taste
Italian seasoned bread crumbs
1/4 cup parmesan cheese, grated

Method And Preparation

Preheat the oven to about 400 degrees.

In a large mixing bowl mix together the cheese, bread crumbs and all the other seasoning and the red paprika.

Coat all sided of the chicken breasts with the mixture and arrange on a baking tray.

Bake the chicken for about 20 to 25 minutes until the chicken starts to turn a golden brown.

This dish takes about 30 to 40 minutes to cook and serves 4 persons.
