Pasta With Chicken (Indian Style)
Preparation Time: 20 minutes
Minced chicken – 1/2 lb
Garam masala – 1/2 tsp
Coriander powder – 1 tsp
Tomato sauce – 1 tin
Turmeric powder – 1/4 tsp
Garlic (crushed) – 1 clove
Green capsicum (cut lengthwise) – 1
Dry pasta – 1 cup
Oil – 2 teaspoon
Onion (cut lengthwise) – 1
Egg – 2 optional
Lemon Juice – optional
Take a vessel and pour in 3 cups of water. Turn on the stove and boil the water for 5 minutes keeping the flame at medium heat.
To this hot water, add pasta and boil it until 5 minutes so that pasta is cooked. Stir the pasta carefully to monitor that it does not get stuck at the bottom of the vessel while cooking.
In the meantime, take a pan and put the minced chicken and all the other ingredients and saute with some salt and pepper. Remove from heat when the ingredients are cooked. Once the pasta is cooked, immediately transfer it to a sieve and drain off the excess water in it.
Take a large mixing bowl and place the drained pasta in it. To this add the mixture of chicken and mix them well. In another small pan, break the eggs and scramble them with salt and pepper. This is optional and used for garnish purposes.
You may also use coriander leaves to garnish the dish and also pour slight lemon juice to top it all.
Chicken Pasta With Grapes
Preparation Time: 15 minutes
Cooked chicken – 1 1/2 cups
Thinly sliced celery – 1/2 cup
Red grapes ( halved ) / cherries – 3/4 cup
Almonds (toasted)- 1/4 cup
Poppy seed dressing – 1/2 cup
Pasta salad mix – 1 box
Boil about two by third cup of water in a saucepan and pour the pasta salad mix into it. Keep the saucepan uncovered and boil it for 12 minutes. Gently stir the pasta so that it does not get stuck at the bottom.
After it is cooked, drain off excess water by shaking it carefully. Take another large bowl and in this mix the dressing and the seasoning. Pour the pasta into this mixture and add the remaining set of ingredients to this as well.
In order that the flavors get absorbed to the pasta, you have to refrigerate this pasta mixture. Take out the frozen minced chicken and shred them either in the blender or using your hand. After the pasta is chilled spread the chicken pieces on its top.
Roast almonds over medium heat and garnish on top of Pasta. Ready to be served.

Less Spicy Chicken Pasta
Preparation Time: 20 minutes
Chicken breasts (boneless, skinless) – 4 big chunks
Olive oil – 2 tablespoons
Dry white wine – 3/4 cup
Ground pepper- as required
Grape tomatoes (halved lengthwise) – 2 cups
Baby spinach -1 bag
Butter – 2 tablespoons
Penne – 1 pound
Low-sodium broth – 3/4 cup
Garlic (minced) – 4 cloves
Parmesan – 4 ounce
Take a large bowl and pour 3-4 cups of water. Boil the water with some salt in it and then add the 2 cups of pasta to cook. Stir the pasta gently while boiling without breaking it. When done, remove from heat and drain off the excess water.
Marinate the chicken with salt and pepper.In a skillet, pour butter and olive oil and wait for it to get heated up. Once the skillet is hot, carefully place the chicken pieces. Turn to the other side when the first side is browned and cooked. Similarly wait for the other side to cook perfectly. After it is done, remove the chicken from heat and reduce the flame.
Into the same skillet add garlic and after about 30 seconds pour in the wine and the broth. The liquid starts boiling with bubbles and then continue heating until the amount of the broth has reduced to almost half the initial quantity. Once it is reduced, turn off the flame and to this add rest of the ingredients, i.e. pasta, chicken, spinach and Parmesan.
Toss the skillet carefully such that the sauce is blended in well with the spinach and the pasta.Pasta is ready to be served.
